Too many apples...so time to experiment! I had some delicious leftover Steel cut oatmeal from breakfast. This is a much healthier filler for meatloaf than the usual white bread. I also had some apples I just picked up from the orchard yesterday so I added a small apple. Fed this to my husband and son and, well, it is gone...

Steps:
- 1. Preheat oven to 350
- 2. Mix all ingredients thoroughly and form into loaf. Put in center of 9x13 pan and bake for 1-1/2 hours or Internal temp to 160.
- 3. Serve with mashed potatoes and corn for a comfort food dinner that you can feel good about!
