Time 35m

Yield 4 to 6 servings

Number Of Ingredients 11

1 1/2 cups blue cornmeal
1 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 cup sugar
2 cups buttermilk
4 eggs
1/3 cup melted butter, plus more for brushing and serving
Maple syrup, for serving
Serving suggestions: sliced bananas or strawberries

Steps:

  • Preheat your waffle iron. Mix the cornmeal, flour, baking powder, baking soda, salt and sugar in a bowl. In a separate bowl, mix the buttermilk, eggs and melted butter. Fold the wet ingredients into the dry ingredients and mix until the ingredients are just barely combined. (Do not over mix the batter or your waffles will be tough.)
  • Brush your waffle iron with butter. Add the batter and cook according to manufacturer's directions.
  • Top the waffles with butter and maple syrup and serve with your favorite topping. (We like sliced bananas or strawberries.)

These waffles were a bit bland. I think I'll try adding some spices next time.

I'm not a fan of the texture of these waffles. They're a bit too dense for my taste.

I'm not sure what I did wrong, but my waffles didn't turn out as light and fluffy as I expected. They were still tasty, but they were a bit dense.

These waffles were easy to make and turned out great! I used a Belgian waffle maker, and they cooked evenly and came out crispy on the outside and fluffy on the inside. I topped them with butter and syrup, and they were delicious.
