Hamburger Zucchini Pie image

Family favorite that makes great use of fresh zucchini and tomatoes. Flavorful and easy! Grandma Dahl's special recipe we all pass down and look forward to each summer

Number Of Ingredients 13

1 1/2 lb hamburger
1/2 c chopped onion
1/2 c green pepper
1/2 c italian bread crumbs
1/2 c parmesan cheese
1 tsp garlic salt
1 tsp thyme, dried
1 tsp oregano, dried
3-4 small zucchini
3-4 tomatoes, overripe or 1 can diced tomatoes
2 refrigerated pie crust
1 Tbsp milk
coarse grind black pepper for sprinkling

Steps:

  • 1. Brown hamburger and add onion and pepper. Cook until tender.
  • 2. Add garlic salt, thyme, oregano, bread crumbs and cheese.
  • 3. Place pie crust in pie plate and layer sliced zucchini, meat mixture, tomatoes and repeat another layer.
  • 4. Place top crust over the top and brush top of crust lightly with milk and sprinkle with coarse black pepper.
  • 5. Bake at 350 for 30-45 min or until crust is browned.
