6 tablespoons olive oil
1/4 cup fresh lime juice
3 large garlic cloves, pressed
2 1/2 tablespoons chopped fresh cilantro
12 large uncooked shrimp, peeled, deveined, tails intact
3 bamboo or metal skewers
2 1/2-inch thick red onion slices
2 ounces crumbled feta cheese

This recipe is a great way to use up leftover shrimp. I usually make a double batch and then use the leftovers for tacos or salads.

I'm not sure what I did wrong, but my shrimp turned out a little dry. The flavor was still good, but I think I need to work on my grilling skills.
