Green Beans Olé image

Bacon adds a twist to this colorful green bean side dish - ready in just 35 minutes.

1 lb fresh green beans, cut into 1-inch pieces
4 slices bacon, cut up
1 medium onion, chopped (1/2 cup)
1 medium tomato, chopped (3/4 cup)
1 clove garlic, finely chopped
1 teaspoon chopped fresh or 1/2 teaspoon dried oregano leaves
1/2 teaspoon salt
Dash of pepper
2 tablespoons lemon or lime juice

Steps:

  • In 2-quart saucepan, place green beans in 1 inch water. Heat to boiling; reduce heat. Simmer uncovered 10 to 15 minutes or until crisp-tender; drain. Immediately rinse with cold water; drain.
  • Meanwhile, in 10-inch skillet, cook bacon over medium-high heat, stirring frequently, until crisp; drain all but 1 tablespoon fat from skillet. Drain bacon on paper towels. Cook onion in bacon fat over medium heat, stirring occasionally, until tender.
  • Stir tomato, garlic, oregano, salt and pepper into onion. Simmer uncovered 5 minutes. Stir in green beans; heat through. Drizzle with lemon juice; sprinkle with bacon.
