Greek Garbanzo Bean Salad image

This is a great salad recipe that's perfect for any Greek-themed dinner.

Number Of Ingredients 13

30 oz garbanzo beans, drained
14 oz can artichoke hearts, drained and quartered
12 oz jar pitted kalamata olives, drained
1 small yellow bell pepper, chopped
2 large cucumbers, halved lengthwise and sliced
1 cup grape tomatoes (i like to cut them in half, but it's not necessary)
1/2 large red onion, chopped
2 clove garlic, minced
4 oz crumbled feta cheese
1/4 cup greek dressing (or italian dressing)
1/2 large lemon, the juice of
1 tsp crushed rosemary
salt and pepper, to taste

Steps:

  • 1. Combine all ingredients in a large bowl. Toss well and refrigerate 1-2 hours before serving.
  • 2. Serve chilled.
