Time 25m

Yield 6 servings

Number Of Ingredients 6

3 cups mix of hulled and quartered strawberries, blueberries, raspberries, and/or blackberries
4 egg yolks
1/3 cup sugar
1/4 cup fresh grapefruit juice
Pinch kosher salt
Grated grapefruit zest

Steps:

  • In a large bowl, toss together the berries. Spoon the berries into serving dishes and set aside.
  • Meanwhile, combine the egg yolks, sugar, grapefruit juice, and salt in a large metal or glass bowl. Whisk vigorously until combined and the color is a pale yellow. Set the bowl over a saucepan of simmering water. Be very careful not to let the bottom of the bowl touch the simmering water. Using a whisk or an electric hand mixer, vigorously whisk the egg mixture until it has tripled in volume and is very thick and creamy, about 4 to 5 minutes.
  • Spoon the warm zabaglione over the berries. Top with a light sprinkle of grapefruit zest. Serve immediately.

I'm not a big fan of grapefruit, but I really enjoyed this dessert. The zabaglione was so rich and creamy, it balanced out the tartness of the grapefruit perfectly.

This recipe is a bit time-consuming, but it's worth the effort. The zabaglione is so light and fluffy, and the grapefruit flavor is perfectly balanced.

I'm allergic to eggs, so I made this recipe with a vegan egg substitute. It worked perfectly! The zabaglione was just as creamy and delicious as the traditional version.

I didn't have any grapefruit, so I used oranges instead. It turned out great! The oranges added a nice sweetness to the dish.

I thought this recipe was just okay. The zabaglione was a little too thick for my liking, and the grapefruit flavor was a bit too strong.

This recipe is way too sweet for my taste. I ended up adding a lot of lemon juice to balance it out.

I'm not sure what went wrong, but my zabaglione turned out curdled. I'm not sure if I overcooked it or what, but it was definitely a disappointment.
