Yield 20

Number Of Ingredients 12

½ cup raisins
1 ⅓ cups unbleached flour
⅔ cup rye flour
⅓ cup white sugar
2 ½ teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
1 ½ teaspoons ground cinnamon
¾ cup apple juice
1 egg
⅓ cup vegetable oil
½ cup applesauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease two 8x4 inch loaf pans. In a small mixing bowl, cover the raisins with hot water; let stand for 10 minutes and drain. Sift together flour, sugar, baking powder, baking soda, salt and cinnamon, set aside.
  • In a large bowl, combine apple juice, egg and oil; beat until well mixed, then stir in the applesauce. Gradually stir in the sifted ingredients until smooth. Add the drained raisins; mixing just enough to evenly distribute. Pour the batter into the prepared pans.
  • Bake for 35 to 40 minutes in the preheated oven, or until a toothpick inserted into the center of the loaf comes out clean. Cool loaf in the pan for 10 minutes before removing to a wire rack to cool completely.

This apple bread is a great way to use up leftover apples. It's also a great snack or dessert. The bread is moist and flavorful, and the apples are perfectly tender. I love the way the cinnamon and nutmeg give the bread a warm, fall flavor.

This apple bread is the perfect fall treat. It's moist, flavorful, and has just the right amount of sweetness. I love the way the apples soften and the bread gets a slight crunch from the walnuts. It's the perfect bread to enjoy with a cup of coffee
