My MIL found this recipe in her Mother's handwriting in a recipe file. It isn't very sweet and I will add 1/2 cup sugar next time I make it. I made this for 8 people tonight and while everyone liked it, they all wished it was a bit sweeter. I added some sour cream and some ricotta cheese as well.

This kugel is a great way to use up leftover pineapple. I always have some leftover pineapple from when I make pineapple upside-down cake.

I'm not a huge fan of pineapple, but I really enjoyed this kugel. The coconut flavor was strong enough to balance out the pineapple, and the cream cheese filling was rich and creamy.
