Steps:
- Combine the cottage cheese, sugar, flour, and egg yolks in an electric blender or food processor and process until smooth. Stir in the raisins, lemon zest, and salt. Fold in the beaten egg whites and pour into a souffle dish that has been buttered and coated with sugar on the inside. Bake in a preheated 450F (220C) oven until the souffle has risen and the top is golden brown, 35 to 45 minutes. Serve immediately. Serves 4 to 6.
