Gail's Chicken Salad image

This is a healthy chicken salad I ate almost everyday for 3 months. I hoped it would help bring my cholesterol down for my annual blood test. To my surprise it brought it down 40 points, plus I lost 10 pounds!

3 -12.5 oz can(s) chunk chicken breast in water
strawberries, fresh, sliced
nectarine, chopped
blueberries, fresh
orange segments, chopped
apple, chopped
onion, chopped
celery, chopped
dried berries (cranberries, cherries, blueberries)
sunflower seeds
pecans, in pieces
broccoli slaw mix
cilantro, fresh (optional)
1 Tbsp orange marmalade (sugar free)
1 - 6 oz key lime, lemon or orange flavor yogurt
1/2 c mayonnaise, fat-free

Steps:

  • 1. Open and drain chicken. Place chicken in a large bowl and break up chunks with fingers.
  • 2. Mix in desired amounts of fruits, vegs/slaw, nuts and cilantro.
  • 3. Mix marmalade, yogurt and mayo together; mix with other ingredients. Add more mayo until salad is desired consistency. Serve on whole wheat bread.
