Frugal Gourmet's Piping Cheese image

This is a Jeff Smith recipe published in his book "The Frugal Gourmet". This soft cheese can be used to make many fancy snacks. The herb blend can be varied.

Yield 3 cups

Number Of Ingredients 12

1 lb cream cheese, at room temp
1/2 cup mayonnaise
1/4 cup sour cream or 1/4 cup yogurt
1/8 teaspoon Tabasco sauce
1 teaspoon soy sauce
1 teaspoon Worcestershire sauce
1/2 teaspoon dry mustard
1/4 teaspoon oregano
1/4 teaspoon basil
1/4 teaspoon whole thyme
1/4 cup fresh-grated parmesan cheese or 1/4 cup romano cheese
salt and pepper

Steps:

  • Whip all ingredients together, and use to fill various snacks. Normally, this is done with a piping bag and tip, but you can fill many types of cracker and vegetable with a small knife or spoon.
