French Baby Beans, Baby Brown Pearl Mushrooms Topped With Almond image

The food store had these baby vegies I just had to buy. I they were tender crisp! The mushrooms I know will be hard to find and I see no reason why you can't use any mushroom. Simple and good!

Number Of Ingredients 9

1 tablespoon olive oil
3 ounces baby brown pearl mushrooms, cut in half
8 ounces baby french beans, sliced in half
1 small onion, diced
1 clove garlic, minced
1/2 small red pepper, cut into thin slices
1 pinch sugar
salt and pepper, to taste
1/4 cup toasted sliced almonds

Steps:

  • In a large pan heat oil add onions, mushrooms, beans, garlic, red pepper stirring till onions are translucent.
  • Add sugar,salt and pepper and 1/8 cup water cover and let simmer till water is gone.
  • Plate and top with almonds.
