FOUR BEAN SALAD image

Yield Serves 8-10

Number Of Ingredients 12

1 (1 lb.) can cut green beans
1 (1 lb.) can cut waxed beans
1 (1 lb.) can red kidney beans
1 (1 lb.) can garbanzo beans
1 1/4 red onions, thinly sliced
3/4 C. minced green pepper
1/2 C. oil
1/3 C. red wine vinegar
1/4 C. burgandy , claret or other red dinner wine
1/2 C. granulated sugar
1/4 t. basil or mixed salad herbs
1/4 t. garlic powder

Steps:

  • Drain beans, combine with 1 onion and 1/2 C. green pepper in large bowl. Combine remaining 1/4 onion and 1/4 C. green pepper with the oil, red wine vinegar, wine, sugar and spices in a blender and liquify. Pour over bean mixture, cover and refrigerate several hours or overnight.
