FLUFFY BANANA CAKE image

This is fast, easy, makes a lot and I usually have the ingredients on hand.

2 large banana, mashed
2 c flour
1/2 tsp baking powder
3/4 tsp baking soda
1/2 tsp salt
1/2 c butter, softened
2 eggs
1 1/2 c sugar
1 tsp vanilla extract
1/2 c buttermilk or sour milk
FROSTING:
8 oz cream cheese
3/4 stick butter
4 c powdered sugar
1 1/2 tsp vanilla

Steps:

  • 1. Cream together sugar and butter. Add eggs, mix well and add mashed bananas. Sift dry ingredients together. Add a little at a time with the buttermilk and vanilla. Baked in a greased 10"x15" pan.
  • 2. Bake at 350 degrees for 30 minutes or until a toothpick comes out clean. Cool and frost.
