Flourless Applesauce Oatmeal Walnut Snack Cake image

This is an easy to fix snack cake, perfect when friends stop by. It is flourless, using oats instead. The applesauce and walnuts add texture and great flavor!

1-3/4 c quick-cooking oats
3/4 c light brown sugar
1 tsp baking soda
1/2 tsp baking powder
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp salt
1 c applesauce, unsweetened
1/4 c canola oil
1 large egg
1 tsp vanilla extract
1/3 c chopped walnuts
2 tsp butter

Steps:

  • 1. Preheat oven to 350 degrees F. Line an 8- x 8-inch baking pan with parchment or wax paper.
  • 2. Place the oats in a blender or food processor and blend until resembles flour. Place in medium bowl. Add brown sugar, baking soda, baking powder, cinnamon, nutmeg, and salt; mix well. Measure out 1/4 cup of this mixture to a small bowl and set aside.
  • 3. In a small bowl, stir together applesauce, oil, egg, and vanilla; add to dry ingredients and mix until thoroughly combined. Stir in walnuts and pour into baking dish. Mix together the butter with the reserved dry ingredients to make a streusel-like topping and sprinkle over top of the cake.
  • 4. Bake for 25 to 30 minutes, or until toothpick inserted in center comes out dry. Let cool, then cut into squares.
