This is an easy to fix snack cake, perfect when friends stop by. It is flourless, using oats instead. The applesauce and walnuts add texture and great flavor!

Steps:
- 1. Preheat oven to 350 degrees F. Line an 8- x 8-inch baking pan with parchment or wax paper.
- 2. Place the oats in a blender or food processor and blend until resembles flour. Place in medium bowl. Add brown sugar, baking soda, baking powder, cinnamon, nutmeg, and salt; mix well. Measure out 1/4 cup of this mixture to a small bowl and set aside.
- 3. In a small bowl, stir together applesauce, oil, egg, and vanilla; add to dry ingredients and mix until thoroughly combined. Stir in walnuts and pour into baking dish. Mix together the butter with the reserved dry ingredients to make a streusel-like topping and sprinkle over top of the cake.
- 4. Bake for 25 to 30 minutes, or until toothpick inserted in center comes out dry. Let cool, then cut into squares.
