Steps:
- 1. Grease 10-inch quiche dish.
- 2. Spread salsa on the bottom.
- 3. Distribute chopped artichokes evenly over salsa.
- 4. Sprinkle parmesan cheese over the artichokes.
- 5. Sprinkle Monterrey jack and cheddar cheese over all.
- 6. Place eggs in blender or food processor and blend until smooth.
- 7. Add sour cream and blend.
- 8. Pour egg mixture over the cheeses.
- 9. Bake uncovered in 350F oven for 30-40 minutes or until set.
