Fiesta Omelet image

3/4 c salsa
1 c artichoke hearts, chopped
1/4 c parmesan cheese, grated
1 c monterey jack cheese, shredded
1 c cheddar cheese, shredded
6 eggs
8 oz sour cream

Steps:

  • 1. Grease 10-inch quiche dish.
  • 2. Spread salsa on the bottom.
  • 3. Distribute chopped artichokes evenly over salsa.
  • 4. Sprinkle parmesan cheese over the artichokes.
  • 5. Sprinkle Monterrey jack and cheddar cheese over all.
  • 6. Place eggs in blender or food processor and blend until smooth.
  • 7. Add sour cream and blend.
  • 8. Pour egg mixture over the cheeses.
  • 9. Bake uncovered in 350F oven for 30-40 minutes or until set.
