Fast Fix up Reuben Casserole image

Fixings from the famous sanmdwich figure in this hearty one pan meal. I found this recipe in Home Cooking magazine. I have not tried this recipe, but I wanted to post it for safe keeping.

Number Of Ingredients 7

20 ounces frozen hash brown potatoes
1/4 teaspoon salt
1/4 teaspoon pepper
1 1/2 lbs sliced lean corned beef
1/4 cup Russian salad dressing, plus additional on the side
16 ounces sauerkraut, drained
8 slices swiss cheese, cheees

Steps:

  • Preheat oven to 450.
  • Grease a 13x9x2-inch baking dish.
  • Spread hash browns in prepared baking dish. Season with salt and pepper. Bake 15 minutes.
  • Top with corned beef, slightly over lapping slices. Spread russian dressing.
  • on top. Spoon on sauerkraut. Cover with swiss cheese. Bake 15 minutes more. Serve with extra dressing on the side.

I'm not a huge fan of Reuben sandwiches, but I loved this casserole! It's a great way to enjoy all the flavors of a Reuben without the mess.

I added a layer of mashed potatoes to the bottom of the casserole. It was a great way to use up some leftover potatoes, and it made the casserole even more filling.

I had some trouble finding rye bread cubes at the store. I ended up using regular white bread cubes, and the casserole still turned out great.
