Eggplant and Rice Fritters image

This is good as a snack or as a side.

Number Of Ingredients 9

2 c eggplant, cooked and mashed
1/4 c onion, grated
1 c pepper jack cheese
1 tsp louisisana hot sauce
2 c cooked rice
2 large eggs, beaten
1/2 c all purpose flour
1/2 tsp each of salt and pepper
vegetable oil for frying (i like safflower oil)

Steps:

  • 1. Combine eggplant with all ingredients. Mix well. Drop rounded Tablespoons full into 1/2" of hot oil in heavy frying pan. Fry until brown, turn and brown other side. Remove from hot oil, drain on paper towels. Best when eaten warm.
