Yield Eight servings

Number Of Ingredients 7

6 medium sweet potatoes
2 cups sugar
1 teaspoon freshly grated nutmeg
6 inch strip of lemon rind, yellow part only
1/2 teaspoon salt
6 tablespoons unsalted butter
4 tablespoons lemon juice

Steps:

  • Rinse the potatoes under warm water. Place in a large pot, cover with cold water and bring to a boil. Reduce heat and simmer until potatoes are tender, about 30 minutes. Drain and let cool.
  • In a saucepan over medium heat, combine the sugar, 1/2 cup water, nutmeg, lemon rind and salt. Simmer for 10 minutes. Add 5 tablespoons of the butter and stir well. When the butter has melted, remove from heat, beat in the lemon juice and set aside.
  • Preheat the oven to 425 degrees. Peel the sweet potatoes and slice into 1/2-inch discs. Use the remaining butter to grease a shallow baking dish. Lay the sweet potatoes in a single layer, pour the lemon syrup on top and bake for 30 minutes until bubbling hot.

This recipe is a great starting point, but I like to add my own personal touches. I usually add a bit of garlic and chili powder to the glaze.

The sweet potatoes were a bit undercooked for my taste. I would recommend roasting them for a few minutes longer.

I'm not sure what went wrong with my sweet potatoes, but they turned out dry and bland. I think I might have overcooked them.

This recipe is a great way to use up leftover sweet potatoes. I like to add a bit of chopped bacon to the glaze for extra flavor.
