Easy S'mores for anytime image

My grand kids LOVE S'mores so we have come up w/ many different recipes like S'mores muffins and now S'mores cookies. They love them as does hubby!! Who wouldn't? They're gooey and have chocolate and marshmallow, perfect for these cold nights w/ a mug of hot cocoa.

Time 1h33m

Number Of Ingredients 8

1 c salted butter, soft
1/2 c packed light brown sugar
1 large egg, room temp
1 tsp vanilla
1-1/2 c flour
1-1/4 c graham cracker crumbs
1-1/3 c mini marshmallows
60 pieces from a hershey bar, broken into small pieces

Steps:

  • 1. In large bowl beat butter and brown sugar until fluffy. Beat in egg and vanilla. Add flour and beat until blended.
  • 2. Beat in graham cracker crumbs until it forms a dough. Cover, refrigerate 1 hr. Heat oven to 325. Place parchment paper down on several cookie sheets.
  • 3. With clean hands, roll dough into balls. Depending on how big or small you want them, it will make between 30 & 60 cookies. Place balls, 2" apart, on cookie sheets. With clean small spoon, dip spoon into flour then make an indent in each cookie. Bake about 10 mins or until cookies are firm. Press 2-3 mini marshmallows into the indent of each cookie, place back in oven for 3 mins. Top each cookie w/ some Hershey chocolate pieces and press w/ spoon , very gently. Once melted, spread chocolate over marshmallows.

I made these smores in the oven and they turned out great. They were just as good as the ones I've made over the campfire.

I used dark chocolate instead of milk chocolate and it was delicious. The smores were still sweet, but they had a more sophisticated flavor.

I added a little bit of sea salt to the chocolate and it was amazing! It gave the smores a nice salty-sweet flavor.
