Easy Coconut Balls image

What's not to like about sugar, coconut and peanuts. Placed here to try, can't wait. These little morsels sound wonderful to me.

2/3 cup sugar, brown
2 cups coconut, flaked,
1/2 cup peanuts, coarsley chopped

Steps:

  • 1. Put the sugar in a pan and heat until it melts. You will need to work quickly, stir constantly until it becomes thick and dark brown in color.
  • 2. Now add the coconut and cook for 2 minutes. The sugar will turn light brown when ready. Add the peanuts and mix well.
  • 3. Remove the pot from the heat and let it cool slighty. When the sugar mixture is cool enough to handle, form into small balls and place on wax paper to set.
