1/2 cup flour
1/2 cup yellow cornmeal
1 teaspoon salt
1/2 teaspoon pepper
1/2 cup milk
1 1/2 lbs catfish meat
oil (for deep frying)

Steps:

  • Mix dry ingredients.
  • Heat oil to 365F degrees.
  • Dip fish in milk, then in flour mixture.
  • Fry a few at a time, turning once, about 2 minutes each side.
  • Drain on paper towels.
