Steps:
- 1. heat oven to 425 degrees. Line baking pan with foil and set rack inside. optional: use the broiler pan, but the rack keeps the chops crisper. Sprinkle chops with lemon pepper or seasoning salt and white pepper. Let stand and marry for 20-30 minutes.
- 2. In one pie plate mix together the 2 kinds of bread crumbs. In another, mix together the applesauce and mustard. In a 3rd one put the flour. Dredge in flour, shake off excess. Then dredge in applesauce/mustard, and then in crumb mixture. Place on rack on baking sheet.
- 3. Bake for 20 minutes or until browned and done. I like them cooked to 150 degrees. Let rest for 10 minutes. Serve and enjoy!
