Steps:
- Sauté and break up sausage, with the oil, in a large skillet. Add onion & Anaheim pepper and continue to sauté, stirring and breaking up sausage until it loses its pink color and is cooked through. Stir in seasonings, then add corn, black beans, tomatoes and wine or beer. Simmer, stirring occasionally, for 10-15 minutes, until liquid is reduced by half. Remove from heat and serve with cilantro and lime slices on the side. Add a green salad and bisquits or corn bread.
