This is a great bean soup and a break from pinto beans which is almost a staple here in Texas. I love this served with hot corn bread.

Steps:
- 1. Rinse and drain the white beans.
- 2. Place beans in the crockpot along with all of the other ingredients.
- 3. Stir to combine, cover and cook on low for 8 to 10 hours or until beans are tender.
- 4. Remove the bay leaf before serving.
- 5. Great when garnished with chopped green onions and hot cornbread.
