My mother would make this when I was growing up but not in a crockpot. She has all her recipes in her head pretty much so I tried to duplicate it. I tweeked it a little, so don't tell her, and this is what I came up with. It was so darn good and all ready by the time I got home from work! Love my crockpot!

Time 7h20m

Number Of Ingredients 10

1 1/2 lb boneless sirloin beef cut in cubes
1/2 c flour
1/2 tsp salt
2 Tbsp olive oil, extra virgin
3 medium potatoes, cut in wedges
1 1/2 c baby carrots
1 medium onion cut in slices
1 can(s) italian diced tomatoes with oregano and garlic
1 can(s) cream of mushroom soup
1 tsp parsley

Steps:

  • 1. Cut your steak into cubes and flatten them a little, place in the flour, salt and pepper in a ziplock bag. Shake and coat the steak. Brown in the olive oil on both sides.
  • 2. In your crockpot layer your potatoes, carrots, beef and onions. In a small bowl combine your mushroom soup with the tomatoes then pour over the top.
  • 3. Cover and cook on low for 6 to 7 hours or until the meat and veggies are tender. Sprinkle with parsley before serving. Enjoy.
  • 4. Note: If you do not use a liner, remember to spray your crockpot with cooking spray to prevent any sticking and to make clean up easier.

This dish was a bit too bland for my taste. I think it needed more seasoning.

I've made this dish several times now and it's always a hit. The beef is always tender and flavorful, and the gravy is thick and rich. I love that I can just throw everything in the crockpot and forget about it until dinnertime.
