We loved the extra tang and kick pepperoncini peppers give the gravy (they're a sweet, mild chili pepper). You can even add a bit of their juice to the Crock Pot for even more flavor. This is a hearty set it and forget it slow cooker...

Steps:
- 1. Spray bottom and sides of a 6 quart oval Crock Pot with cooking spray to make clean up easier.
- 2. Place London broil in the bottom of Crock Pot.
- 3. Sprinkle the ranch dressing mix on the meat. Spread it around so it covers the top.
- 4. Sprinkle the au jus mix on the meat. Spread it around so it covers the ranch mix.
- 5. Remove stems and place the pepperoncini on top of the powdered mixes.
- 6. Add the cut up butter to the top of the mixes.
- 7. Add the potatoes around the outer edge of the meat. They do not have to sit on the bottom. DO NOT ADD ANY LIQUID!!!!
- 8. Cover and cook for 4 hours on high or 8 hours on low.
- 9. Remove potatoes. Cut meat into serving pieces and stir into sauce in bottom of Crock Pot. Return potatoes to pot. Serve
