From Fitness Magazine. We thought this was quite good, and easier than making it completely from scratch on the stove. I subbed fresh tomatoes and jalapenos with no problems. I also stirred in some small cooked and peeled shrimp 15 minutes before serving. I used Zatarain's Jambalaya mix which has no separate seasoning packet, so both the rice and spices went in together.

This jambalaya is a great way to use up leftover chicken. I usually make a big batch of chicken on the weekend and then use it to make this jambalaya during the week.

I was a bit hesitant to try this recipe because I'm not a huge fan of okra, but I was pleasantly surprised! The okra was cooked perfectly and added a nice texture to the dish.
