One of mom's Alabama recipes from her grandma . Grandma made it with a roux and mushrooms ,mom used cream of mushroom soup both ways are good.

Steps:
- 1. Heat oven to 325^. Grease a 2 quart casserole and set aside. Add the bacon grease in a medium saucepan heat to melt over medium heat . Add the onion and pepper and sauce until tender; about 2 minutes; then add the soup, milk and hominy to the pan with the mixture. Stir to combine.
- 2. Now add the mustard, olives, and salt and pepper to taste. stir to combine. In the prepared casserole layer 1/2 the hominy mixture, 1/2 the grated cheese, and 1/2 of the onions rings or crushed potato chips. Repeat layering and end with the onion rings or crushed potato chips on top. Bake for 30 minutes, or until bubbly and heated through.
- 3. Grandma's: Instead of the mushroom soup. 1/2 cup chopped mushrooms 1/4 cup chopped onions 1/2 cup diced bell pepper Sauté in 3 tablespoons of bacon grease then add 3 Tablespoon of flour and the 1/2 cup milk and dry mustard, salt and pepper; Stirring until well blended and thickened. Remaining recipe the same.
