Steps:
- In a large skillet, heat oil over medium-high heat. Add in the carrots, onions, peppers and celery. Saute for about 6-7 minutes. Add in the corn and heat through. At the very end, add in the pineapple and juice and then stir in the peanut butter, add more to your liking and if it's too thick, stir in a little water. Meanwhile, clean the fish. Put a good amount of pancake batter in a baggie and add the seasonings (we stick with salt and pepper). Add in the fish and shake around to coat. In a large pot, get the oil up to medium-high temperature (we do this outside on the grill in a cast iron pot). Cook the fish until done and serve over the stir fry vegetables.
