Cranberry Walnut Cobbler image

I have not tried this recipe, but I am making it later for desert, I love cobbler, but I have never had cranberry cobbler. I thought I would post it while I had time. This is a super quick recipe and easy to make.

2 1/2 c fresh or frozen cranberries
3/4 c chopped walnuts
1/2 c plus 3/4 cup granulated sugar
2 large eggs
12 Tbsp (11/2 sticks) unsalted butter, melted
1/4 tsp almond extract
1 c all-purpose flour
pinch of salt

Steps:

  • 1. Preheat oven to 350F. In 9-inch pie pan combine cranberries, walnuts and 1/2 cup sugar; toss until coated. In medium bowl, whisk eggs, melted butter, remaining sugar and almond extract until blended. Fold in flour and salt until combined. Pour the batter over the cranberry mixture. Bake for 40 minutes, until crust is golden and fruit bubbles. Transfer to wire rack to cool.

I'm not a big fan of cranberries, but I really enjoyed this cobbler. The walnuts added a nice crunch and the sweetness of the sugar balanced out the tartness of the cranberries.
