Number Of Ingredients 7

2 boxes blueberry muffin mix
2 cups of white cranberry juice
2 cans of red cranberries
2 teaspoons vanilla
2 teaspoons cinnamon
2 1/2 cups of toasted coconut
1 egg

Steps:

  • In a large bowl mix both boxes of muffin mix and all ingredients (not using blueberries in this recipe so remove them and use for another recipe if wanted or discard). Pour batter into cans or other containers filling half way. Bake at 400 degrees for 25 minutes or until a testing skewer comes out clean. Decorate cans if desired or serve in different containers.

I made these cakes gluten-free by using gluten-free flour and they turned out great! I'm so glad I can still enjoy this recipe even though I have celiac disease.

I'm not sure what went wrong, but my cakes turned out really dense. I think I might have overmixed the batter.

I'm not a big fan of cranberries, but I really enjoyed these cakes. The vanilla flavor was strong enough to balance out the tartness of the cranberries.

I love the idea of these cakes, but I think they would be better if they were baked in a muffin tin instead of a can.
