CRANBERRY GINGER OATMEAL COOKIES image

Number Of Ingredients 14

1/2 cup (1 stick) butter, softened
1/2 cup brown sugar
1/4 cup sugar
1 egg
1/2 tsp vanilla
1/2 cup flour
1/4 cup whole wheat flour
1/2 tsp baking soda
1/2 tsp powdered ginger
1/4 tsp salt
2 tbsp crystallized ginger, finely chopped
1 1/2 cups uncooked oats
1/2 cup dried cranberries
1/2 cup pecans, chopped

Steps:

  • Cream softened butter with brown and white sugars. Beat in egg and vanilla. Mix in dry ingredients. With a wooden spoon, stir in crystallized ginger, oats, cranberries and pecans. Drop rounded tablespoonfuls onto a cookie sheet and bake in a 350 degree oven for about 15 minutes, or until lightly browned.
