Steps:
- melt butter in frying pan,add mushrooms & mix well. saute on med. until dry & lightly browned, stirring infrequently. add sherry & cook until dry. scrape into mixing bowl. chop veggies medium fine & add to pan with oil & seasonings & reserved crab liquid. saute 8 min. on medium high. add white wine, lemon juice &lemon zest. cook until dry & lightly browned. add chopped shrimp &cook 1 min. spread on plate to cool. add to mixing bowl with crab, jack cheese, beaten egg & half of parmesean . mix well and adjust seasonings. form into 1/3c. patties. dust with remaining parmesean and a little flour. press into patties. lightly oil fry pan and fry patties on high several minutes each side until well browned. serve with hollendaise or a garlic-lemon mayonaise.
