Country Soup in a Jar image

This make ahead is a great staple in any pantry. So make a few for yourself as well as others. Great for new time cooks or in a house warming basket. These are great in a basket of treats for someone who is ailing.

1/2 c barley
1/2 c dried split peas
1/2 c uncooked rice
1/2 c dry lentils
2 Tbsp dried minced onion
2 Tbsp parsley flakes
2 tsp salt
1/2 tsp lemon pepper
2 Tbsp beef bouillon granules (can use chicken or vegan)
1/2 c uncooked alphabet pasta
1 c uncooked twist macaroni

Steps:

  • 1. In a wide-mouth jar, layer the barley, peas, rice & lentils. Then layer around the edges the onion, parsley, salt, lemon pepper, bouillon, and the alphabet pasta. Fill the rest of the jar with the twist macaroni. Seal the jar.
  • 2. Cooking Directions: (To be included with the soup mix)
  • 3. Country soup Add contents of the jar to 3 quarts of water. Add 2 stalks of chopped celery, 2 sliced carrots, 1 cup shreeded cabbage (optional), and 2 cups sun dried tomatoes or cut up regular ones. Heat over medium-low heat, cover & simmer for about 1 hour or until vegetables are tender. Note can add leftover Chicken or beef if desired
