Cottage Waldorf Salad image

A healthy lunch that is low in saturated fat and high in protein. Makes a good main dish salad - just increase quantities based on the number of servings you need.

1/2 cup low fat cottage cheese
1 tablespoon mayonnaise
1 apple, chopped, leave peel on
1/4 cup chopped celery
2 tablespoons chopped walnuts
2 tablespoons dried cranberries (optional) or 2 tablespoons raisins (optional)

Steps:

  • mix cottage cheese and mayo in a bowl.
  • stir in other ingredients.
  • enjoy!
