Cornucopia Salad Recipe - (4.4/5) image

Number Of Ingredients 19

1/2 head leaf lettuce, chopped
1/2 head romaine lettuce, chopped
1 C celery, diced
4 green onions, diced
1 11 oz can mandarin oranges
1 avocado, chopped
1 apple, diced
1/4 C dried currants
1/2 C blue or feta cheese
Optional: 3 cooked chicken breasts, diced or sliced
CANDIED ALMONDS
1/2 C sliced almonds
3 T sugar
SALAD DRESSING
1/4 C oil
1 T parsley
2 T sugar
2 T white wine vinegar
1/2 t salt & pepper

Steps:

  • 1. Chop all ingredients. Save the apples & avocados until right before serving to preserve color. 2. Candy the almonds by cooking for a few minutes in a skillet until toasted. 3. Mix dressing & toss right before serving. Enjoy!
