1 cup flour
1 cup oat bran
2 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon salt
2 teaspoons cinnamon
1 cup brown sugar
1 1/2 cups grated carrots
2 large tart apples, grated
1/2 cup raisins
1 cup chopped pecans
1/4 cup oil
1/2 cup skim milk
2 eggs, lightly beaten
1 teaspoon vanilla

Steps:

  • Combine dry ingredients in large bowl.
  • Stir in carrots, apples, raisins, and pecans.
  • Make a well in the center, and add wet ingredients. Stir until just moistened.
  • Pour into greased muffin tins.
  • Bake 375 18-20 minutes.
