COFFEE MARINATED GRILLED PORK image

Number Of Ingredients 13

1/2 Cup (C) freshly ground coffee
1/2 C vegetable oil
1/4 C molasses
1/4 C dry roasted macadamia nuts
1/4 C maple syrup
1/4 C soy sauce
2 garlic cloves
2 T fresh lime juice
1 T rice wine
1 Jalapeno chopped
1 1/2 t minced peeled fresh ginger
1 1/2 t each of kosher salt and black pepper
2 pork tenderloins (about 2.5 lb total)

Steps:

  • Puree all ingredients except pork in a processor until almost smooth. Transfer into gallon freezer bag. Add pork, seal bag. Marinate and chill for 24-48 hours. Then grill pork , turning often roughly 25 minutes until center reaches 145 degrees. Let stand 10 minutes and thinly slice.
