Belgian Waffles with Coconut Flour
Yields: 2 saving
Ingredients:
3 eggs, lightly mixed
Sweetener to taste (I used 1/4 cup sugar)
1 tbsp. Organic Coconut Oil, (melt if it's too tough to scoop)
1/2 cup Coconut Flour
1/4 tsp. Baking powder
1/4 tsp. Baking soda
Pinch of Salt
1/2 cups Coconut milk *splash more if needed
*Oil for brushing the waffle iron/maker

Steps:

  • Directions: Mix eggs, then add sweetener (read notes), and coconut oil, mix well then add coconut flour, following baking powder, baking soda, pinch of salt, stir and add milk last. You might want to add more if it's too thick. Combine everything well, until the texture is smooth. The batter will be thicker than traditional waffles, but not far off. Preheat the waffle maker brush oil on the waffle iron and scoop the batter in and pour over the waffle iron. Close the lid and wait until it is ready to open. Once waffle is done, be careful when you remove it. The texture of the waffles with coconut flour is different so they rip easily. Carefully start from one corner and remove at ones. NOTE** Use a sweetener that supports your diet. I used sugar, but let's say you'd like to use liquid stevia, so I'd suggest for you to use like 1 teaspoon or to taste. As for coconut oil, you can melt the coconut oil in the pot of warm water, placing a jar in and waiting for a few minutes until it's easy for you to scoop. I said it in the directions, but I feel the need to say it again: These waffles are NOT your typical traditional waffles, they are very soft, and they rip easier than when made with all purpose flour. You can also use low fat 'regular' milk, even soy milk would work fine. Any other add-ins: cinnamon, nutmeg, powdered ginger etc. I used coconut sugar and increased the coconut milk to between 3/4 & 1 cup.

I froze some of these waffles, and they reheated beautifully. I just popped them in the toaster oven for a few minutes, and they were as good as fresh.

These waffles are a great make-ahead breakfast. I made a batch on Sunday, and I've been reheating them in the toaster all week.

I served these waffles with fresh berries and whipped cream, and they were absolutely delicious. The berries and whipped cream complemented the coconut flavor of the waffles perfectly.

I added some chocolate chips to the batter, and they turned out amazing! The chocolate chips melted in the waffle maker and created gooey pockets of chocolate.

I made these waffles in my waffle maker, but I'm sure they would also be good cooked in a pan on the stovetop.

These waffles are a great way to use up leftover coconut flour. I always have a bag of coconut flour in my pantry, and I'm always looking for new ways to use it.

I've been looking for a healthy waffle recipe that doesn't use a lot of sugar, and this one fits the bill. The waffles are sweet enough without being too sugary.

I've tried many coconut flour waffle recipes, but this one is by far the best. The waffles are crispy on the outside and fluffy on the inside, and they have a delicious coconut flavor.
