CITRUS GREEN BEAN WITH PINE NUTS image

Yield 4 servings

Number Of Ingredients 8

1 lb green beans, trimmed
2 tsp olive oil
2 large shallots, sliced
1 tsp grated orange rind
1 tbs fresh orange juice
1/3 tsp coarse sea salt
1/4 tsp black pepper
1 tbs pine nuts, toasted

Steps:

  • 1. Boil green beans for 2 minutes. Drain. Rinse under cold water. Drain well. 2. Heat olive oil over medium-high heat. Saute shallots until tender (2 minutes). 3. Add green beans, orange rind and juice, salt and pepper and saute for 2 minutes. 4. Spoon onto plate and sprinkle w/ toasted pine nuts.
