These are crisp on the outside and soft and cakey on the inside, thier like a super soft snickerdoddle. HINT:You can sub. one 6-oz container of plain or vanilla yogurt for the buttermilk, I do it all the time because I rarely have buttermilk on hand.

Steps:
- 1. Preheat oven to 400.
- 2. Cream shortening and sugar together, add egg mix well, add buttermilk and vanilla.
- 3. Sift togehter flour, baking soda, and salt.
- 4. Add dry ingredients to the wet ingredients in three additions until just combine.
- 5. Chill dough 1-2 hours.
- 6. Drop rounded tspns. of dough into cinnamon sugar mixture, place 2 inches apart on a lightly greased cookie sheet, bake until set but not brown, 8-10 minutes.
