Cinnamon Chip, and cherry Oatmeal cookies image

These are a twist on traditional Oatmeal cookies.

Number Of Ingredients 12

1 c butter
1 c dark brown sugar
1/3 c sugar
2 eggs
1 1/2 tsp vanilla
1 1/2 c all purpose flour
1 tsp baking soda
1 tsp pumpkin pie spice
1/2 tsp kosher salt
2 1/2 c quick cooking oatmeal
1 pkg cinnamon chips
1 c dried sour cherries, chopped

Steps:

  • 1. HEAT oven to 350 degrees.
  • 2. CREAM butter, brown sugar, and sugar in a bowl until creamy. Add eggs and vanilla, mix well. Combine flour, baking soda, salt and pumpkin spice; add to butter mixture, beating well. Stir in oats cinnamon chips and chopped cherries.
  • 3. DROP by heaping teaspoons onto ungreased cookie sheet.
  • 4. BAKE 10 to 12 minutes or until lightly browned. Cool 2 minutes; remove from cookie sheet to wire rack.
  • 5. BAR VARIATION: Spread batter into lightly greased 13x9x2" pan. Bake at 350 degrees for 25 to 30 minutes or until golden brown. Cool; cut into bars. Yields about 3 dozen bars.
