Chocolate Sandwich Cookies image

From Taste of Home (Dec.-Jan.'96) Christmas favorite!

2 pkg devil's food cake mix
4 eggs, lightly beaten
2/3 c oil
FROSTING
1 pkg (8 oz.) cream cheese, softened
1/2 c butter
3 to 4 c powdered sugar
1/2 tsp vanilla
red and green food coloring (optional)

Steps:

  • 1. In a mixing bowl, beat cake mixes, eggs and oil (batter will be very stiff). Roll into 1-inch balls. Place on ungreased baking sheets. Bake at 350° for 8-10 minutes or until a slight indentation remains when lightly touched. Cool
  • 2. In another mixing bowl, beat cream cheese and butter. Add sugar and vanilla. Mix until smooth. If desired, tint with food coloring. Spread on bottom of 1/2 of the cookies. Top with remaining cookies.
