Crumb mixture:
2 cups flour
1 1/2 cups sugar
2 cups uncooked quick oats
1 1/4 cups softened unsalted butter
Filling:
1 can (21 ounces) cherry pie filling
1 teaspoon almond extract
Drizzle:
1/2 cup real semi-sweet chocolate chips
1 Tablespoon shortening

Steps:

  • Heat oven to 350. Combine all crumb mixture in large bowl. Beat at low speed until mixture resembles course crumbs. Research 1 1/2 cup crumb mixture. Press remaining mixture onto bottom of ungreased 13" x 9" baking pan. Bake for 15-20 minutes, until very lightly browned. Meanwhile, combine all filling ingredients in same bowl. Spread filling over hot, partially baked crust; sprinkle with remaining crumb mixture. Bake for 27-32 minutes or until lightly browned. Melt chocolate chips and shortening over low, heating and stirring constantly until smooth. Drizzle over bars and cool.

These cherry bars are the perfect summer dessert. They're light and refreshing, and the cherry filling is bursting with flavor. I love that they're not too sweet, so you can enjoy a few without feeling guilty.
