Chocolate Chip Soybean Cookies image

This super snack is crisp, sweet and nutritious. Our grandson Timothy is a big fan of these cookies.-Pat Waymire, Yellow Springs, Ohio

Number Of Ingredients 11

1 cup butter, softened
3 cups packed brown sugar
4 large eggs
2 tablespoons milk
1 teaspoon vanilla extract
3 cups all-purpose flour
1 cup soy flour
2 teaspoons baking soda
1 teaspoon salt
4 cups semisweet chocolate chips
2 cups roasted unsalted soybean nuts, chopped

Steps:

  • In a bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Beat in milk and vanilla. Combine flours, baking soda and salt; add to creamed mixture and mix well. Stir in chocolate chips and soybean nuts. Drop by tablespoonfuls 2 in. apart onto greased baking sheets. Bake at 350° for 10 minutes or until lightly browned.
