I know the recipe sounds strange but it is really very good. This one was found in Costco Connection July 2011 and is a great way to use seasonal fruit to make a delicious meal. You can either use poached chicken breasts or use diced rotisserie chicken.

I was really excited to try this recipe, but I was disappointed. The chicken salad was bland and the watermelon and peaches didn't add much flavor. I wouldn't recommend this recipe.

Not a fan of this recipe. The flavors just didn't work for me. The watermelon was too sweet and the peaches were too tart. I think I'll stick to my traditional chicken salad recipe.
