I was watching The Food Network and saw this being made on one of the shows and FELL in love with them! It is so simple cause you are getting the chicken already cooked so that makes the prep and cook time shorter! I tried them and they have been a hit ever since! ENJOY cause we sure do!

Steps:
- 1. Remove the skin and debone the chicken. thinly slice the chicken. Set aside. Dice the onion very small (this helps if folks don't like chunks of onion). Saute onion slightly in butter (just till translucent) Add in the chicken and warm through. Then add in Refried beans. Blend the salsa in a blender to liquefy (again in case folks don't like chunks of vegies) Add to chicken mixture and rinse the blender with a tad bit of water (about 1/4 cup). Simmer for about 5 minutes. Stir in the Cheese. Remove from burner.
- 2. Take your shells and start filling. scoop some of the mixture on to a shell. Do not put alot because you need to roll these. and do not get mixture too close to the end to prevent mixture falling out. After you roll them Place a tooth pick to close. When Rolling complete. DEEP FRY for 5-8 mins till desired browness. I used a Big pot filled with oil. You can cook 4 at a time depending on pot size. Serve with Salsa and Sour Cream and ENJOY!!!!!
