CHICKEN AND CORN CHILI image

Number Of Ingredients 14

olive oil
1 large Spanish Onion, coarsely chopped
1 Green bell pepper, cored, seeded and chopped
6 plum tomatoes, peeled, cored and chopped
2 garlic cloves finely chopped
2 teaspoons chili powder
1 teaspoon dried oregano
2 teaspoons ground cumin
1/2 teaspoon crushed red pepper
1/2 teaspoon coarse salt
1/2 teaspoon ground black pepper
12 boneless, skinless chicken thighs, cut into half inch pieces
3 cups chicken stock
3 cups frozen corn

Steps:

  • heat oil saute onion, pepper, tomatoes, garlic. stir in chili powder, cumin, oregano, red pepper, salt, black pepper. add chicken and cook for 5 minutes, pour in stock and bring to a boil, reduce het to low, cover, cook for 30 minutes, add corn and simmer for 10 minutes. Add more seasoning if necessary
